Soft Oreo Pumpkin Cookies Recipe

If there are three things about this world I could change, it would be, that every village and every town in Africa had access to clean water, that the homeless are not forgotten and that pumpkin cookies could be made dense and chewy. I am serious.  I have made progress in the first two. I have traveled to Africa twice, an experience that left me forever changed and one that I treasure every day of my life and I’ve participated in, organized and contributed to numerous organizations & events that help the homeless in San Diego.  For some reason, I don’t really connect to old people, I don’t do much with kids, but with Africa and the homeless, they tug at my heart strings every time.  But the last one, making a pumpkin cookie not cakey but dense and chewy, I just can’t seem to make much progress in. I get frustrated.


This oreo pumpkin cookie recipe, is however the closest I’ve gotten.  So yay! I guess that’s progress.  They are definitely not as cakey and fluffy as a cookie you’d find in a whoopie pie but they are still a little fluffier than I normally like. If you haven’t noticed, I really like my cookies dense and chewy. But if you like a soft and a little chewy lighter cookie, then these cookies are a definite must try for you.  The flavor is absolutely fantastic!!  The oreo cookies add a yummy chocolate flavor to the pumpkin cookie and it’s just divine! And in the spirit of Halloween, I topped them with candy corn.

Oreo Pumpkin Cookies Recipe

This recipe is adapted from Sally’s Baking Addiction with the marvelous suggestion to add molasses.  She is so right, the flavor is so good with the molasses!! Thank you Sally!

Soft Oreo Pumpkin Cookies Recipe


  • 1 cup Unsalted Butter Melted
  • 1/2 cup Brown Sugar
  • 1/2 cup White Sugar
  • 1 Large Egg Yolk
  • 1 teaspoon Vanilla
  • 2 1/4 cups All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 teaspoons Pumpkin Pie Spice
  • 3/4 cups Pumpkin Puree
  • 2 cups Crushed Oreo Crumbs
  • Candy Corn for Topping


Step 1
In a microwave safe bowl, melt the butter. With a wooden spoon mix in the molasses, brown sugar and white sugar. Add the vanilla, egg yolk and pumpkin puree and mix to combine.
Step 2
In a separate bowl, sift the flour, salt, pumpkin pie spice and baking soda. Add the dry ingredients into the wet ingredients and mix to combine.
Step 3
Add the crushed oreo crumbs. Refrigerate your dough for at least 30 minutes or overnight.
Step 4
Preheat your oven to 375. Line your cookie sheets with parchment paper.
Step 5
Using an ice cream scoop or cookie scoop, scoop cookie dough onto the cookie sheets spaced about 2-3 inches apart. Place 4-5 pieces of candy corn on top of each cookie.
Step 6
Bake 10-11 minutes and let cool on a wire rack before serving.

  2. Oh my goodness, Pumpkin AND Oreos?!! YUM!! This combination can’t be legal. 😉 Though I’ve never minded a cakey pumpkin cookie, these look awesome!! Where did you go in Africa?
