In a microwave safe bowl, melt the butter. With a wooden spoon mix in the molasses, brown sugar and white sugar. Add the vanilla, egg yolk and pumpkin puree and mix to combine. | |

In a separate bowl, sift the flour, salt, pumpkin pie spice and baking soda. Add the dry ingredients into the wet ingredients and mix to combine. | |

Add the crushed oreo crumbs. Refrigerate your dough for at least 30 minutes or overnight. | |

Preheat your oven to 375. Line your cookie sheets with parchment paper. | |

Using an ice cream scoop or cookie scoop, scoop cookie dough onto the cookie sheets spaced about 2-3 inches apart. Place 4-5 pieces of candy corn on top of each cookie. | |

Bake 10-11 minutes and let cool on a wire rack before serving. |
