Crunchy Chewy & Damn Delicious Potato Chip Cookie Recipe

Call me a city girl if you want but I just successfully completed my first mission at Dixieline! Woohoo! Yea I’m excited.  You have no idea how long I’ve been putting it off. I know I am totally out of place in there but I think everyone else knows it too.  You should see how talented I am in my heels though hauling lumber into the trunk of my car though. But I really wanted some dark stained wood as props in my pictures.  And after countless trips to Home Goods, Marshalls, TJ Maxx and Goodwills in town with little luck, I decided to make my own so a trip to Dixieline was only out of necessity. And I think it was worth it, I love the dark wood contrasted against the cookie in these pictures.  What do you think?

These cookies are so ridonkuously good….yea I said it… RiDOUNCulous! I’ll say it even though I have no idea how to spell it.

Potato Chip Cookie Recipe

The peppered kettle cooked chips add a kick of peppery flavor that gets you right away and then the cayenne pepper slowly sneaks up on you and knocks you in mouth…but in a good way.  The cookie is chewy yet crunchy from the chips and sweet, salty and spicy all rolled in one. Yup Ridounculously good! Okay, I’m done.  This is one potato chip cookie recipe you’ll want to keep in your back pocket when the need to impress arises.

I thought about adding some different mix-ins in creating this cookie, like chocolate chips, bacon, butterscotch and toffee but at the end of the day I wanted to keep it simple.  I didn’t want anything fighting with the flavor of the chips. Maybe one day I will add toffee, that actually still sounds good but this time I kept it simple and sometimes simple is best.  Delish!

Cayenne Pepper Potato Chip Cookie Recipe


  • 3/4 cups Unsalted Butter softened
  • 1/2 cup Brown Sugar
  • 1/2 cup White Sugar
  • 1 Large Egg
  • 1 1/4 cup All Purpose Flour
  • 3/4 teaspoons Baking Soda
  • 1 teaspoon Ground Cayenne Pepper
  • 2 cups Crushed Pepper Kettle Cooked Chips


I used a food processor to grind and crush the potato chips but if you don't have one, you can always smash the chips in a zip lock bag and that will work as well.


Step 1
Cream the unsalted butter, brown sugar & white sugar in a stand mixer with paddle attachment. Add the egg and mix together.
Step 2
In a separate bowl, sift the flour, baking soda and cayenne pepper. Slowly add the dry ingredients with the wet ingredients and mix until combined. Add the crushed potato chips and mix to combine.
Step 3
Refrigerate the dough for at least 30 minutes. Preheat the oven to 375 degrees F. Line your baking sheets with parchment paper and scoop out about 2-3 tablespoons of cookie dough placed about 2-3 inches apart.
Step 4
Bake for 8-9 minutes rotating the pans in between. Cool before serving.
