Easy One Bowl Greek Yogurt Cookies…Almonds of Joy!

Is anyone else as obsessed with greek yogurt as I am? Seriously I have substituted anything and everything I have ever used sour cream for with greek yogurt and been ecstatic with the results.  Delish! We should change the saying to the next best thing since greek yogurt…move over sliced bread…haven’t you heard carbs are bad. Just kidding I love carbs but I do love greek yogurt!  So if I can sub it in dips, spreads, pasta sauces, muffins, cakes & cupcakes, I can definitely sub it in cookies for some greek yogurt cookies!

I wanted to do a spin on an Almond Joy, one of the best stuffed cookies we used to sell at Farmer’s Markets.  When the Almond Joys would bake inside the cookies something magical would happen and the flavors of the toasted almonds and toasted coconut was to die for!

One-Bowl-Cocoa-Almond-CookiesSo I decided to try a greek yogurt cocoa cookie base with coconuts and almonds and result was definitely delicious! You couldn’t even tell this cookie was on the healthier side…yay! It was rich and chocolatey with magical toasted almonds and toasted coconuts all throughout each yummy bite.

Another bonus with this recipe is that it is a one bowl recipe.  No separate bowls for clean up, no heavy duty stand mixer to lug around. Delicious, simple, easy & healthy…..er. 🙂 Another yay! This is one of the recipes, I use melted butter in.  Melted butter helps to make cookies chewier.  Just make sure you chill the dough before baking or it will spread too much in the oven.

One Bowl Cocoa Almond Coconut Cookies

Ingredients

  • 5 teaspoons Unsalted Butter Melted
  • 1/2 cup Brown Sugar
  • 1/2 cup White Sugar
  • 7 tablespoons Cocoa Powder
  • 1/3 cup Greek Yogurt
  • 1 teaspoon Vanilla
  • 1 cup All Purpose Flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Baking Soda
  • 1 cup Coconut Flakes
  • 1/2 cup Chopped Almonds

Directions

Step 1
Melt the butter in microwave safe bowl. With a wooden spoon mix the brown sugar, white sugar and cocoa powder with the melted butter.
Step 2
Add in the greek yogurt & vanilla and mix to combine.
Step 3
Add in the flour, salt & baking soda. Mix to combine.
Step 4
Add coconut and chopped walnuts and mix together. Chill for 30 minutes.
Step 5
Preheat oven to 375 degrees F. Spoon dough with an ice cream scooper on a cookie sheet lined with parchment paper about 2-3 inches apart. Cookies with spread. Bake for 8-9 minutes. Let cool and serve.

  1. Made these last night, ohhh my goodness they are just lovely and oh so easy! I will note, though, that I found the coconut overpowered the almonds, which is fine because I like coconut, but you know. Also in the ingredients you’ve listed “5 TEAspoons” as the amount of butter…that seemed like a really small amount to me, so I went ahead and used 5 tablespoons. Maybe “teaspoons” was correct and it wasn’t actually a typo, and if so…FYI, I used 5 tablespoons and they still turned out great 🙂
