Cinnamon Toast Crunch Cookies – Cookie Cups with Apples & Cream Cheese

For a while I had a serious problem….I mean serious.  I couldn’t help it and it was happening far more often than I would like to admit.  Around 2 or 3 in the morning, I would wake up in the middle of the night and want to eat a bowl of cereal.  My ultimate comfort food.  They say milk helps you sleep right so is it so wrong that I would have my glass of milk with a side of cereal?

One of my favorite cereals of all time is for sure Cinnamon Toast Crunch and as I was enjoying my 2 am bowl of cereal one night I thought I should totally use these in a cookie! I was also recently so kindly gifted with the cutest and super sweet Crimson Gold Apples from Melissa’s Produce and thought these two combined would make an amazing cookie cup! What goes better with cinnamon than apples? No brainer!

The first step is the cookie crust.  I used a food processor to grind up the Cinnamon Toast Crunch cereal so it pretty finely ground but if you don’t have a food processor you can also place the cereal in a large zip lock bag and get you some anger therapy by pounding the crap out of it. Mix the crushed cereal, melted butter, salt and flour until it is all incorporated. Press down in a cupcake/muffin pan and bake this first.  The reason we bake this first is so the sugars can melt enough to set your crust.Cinnamon Toast Crunch Cookies

While you are baking, slice up your apples.  I used about 8-10 of the tiny super tasty crimson gold apples but if you don’t have any you can probably get away with 2 regular sized apples.  If you are using normal sized apples you will probably want to dice them fairly small instead of slicing to place on top of the cookie crust.

After your crust has baked in the oven for 10-12 minutes. Remove and layer your apples on top of the cookie crust.

Mix the softened cream cheese, egg, sugar and vanilla until it is well incorporated.  Pour this over your apple layer and add the extra cinnamon toast crunch cereal for topping.  I left it in the cereal topping whole form to showcase the classic cereal shape but crushing it and placing it on top is also an option. Serve immediately and if you’re feeling a little crazy try serving it a la mode. This dessert totally takes me back to my childhood but in a super adult way. The classic cinnamon toast crunch flavor is still there but kicked up with the sugared cinnamon apples and the tangy creamy delicious cream cheese cheesecake.  The only thing I will probably change when I make these again, is waiting until after the Cinnamon Toast Crunch cookies have been baked to add the cereal topping just to keep them crunchier. Other than that this dessert is pretty fun and totally awesome!

Cinnamon Toast Crunch Cookies

Ingredients

  • 3 cups Cinnamon Toast Crunch & Som extra for Topping
  • 1 cup Unsalted Butter (melted)
  • 1/2 cup All Purpose Flour
  • 1/2 teaspoon Salt
  • 8-10 Crimson Gold Apples
  • 8oz Cream Cheese (softened)
  • 1/2 cup Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla
  • 3 tablespoons Brown Sugar for the Apples
  • 1 tablespoon Cinnamon

Directions

Step 1
Preheat oven to 350 degrees F. In a food processor or in a large zip lock bag & a pan or rolling pin, crush the 3 cups of cinnamon toast crunch until it is ground pretty fine. Save some extra as a garnish topping. Mix this with the softened butter, flour & salt and press into the bottom of a cupcake pan. Bake the crust in the oven for 10 - 12 mins until it starts to brown.
Step 2
While the crust is baking, slice or dice your apples depending on the type of apple you use. And toss with the 1 tablespoon cinnamon and 3 tablespoons brown sugar. Mix together until all the apples are coated.
Step 3
Combine the softened cream cheese, sugar, egg & vanilla and mix together until it is all well incorporated.
Step 4
After the cookie crusts have baked in the oven for 12-15 minutes, remove the from the oven. Layer the cinnamon sugar apples on top of the crust and pour the cream cheese mixture on top. Add the extra cinnamon toast crunch cereal for topping. I left it in whole form to showcase the classic cereal shape but crushing it and placing it on top is also an option. Bake for 28-30 minutes. Remove to cool and serve immediately. Try a la mode if you're feeling crazy.
