Kahlua White Russian Cookies

I’m going to be honest with you guys. I am a one beer wonder, a one drink stink, a total light weight and a cheap date…bottom line I have a very small tolerance for alcohol.  It’s in my genes.  My dad could get a buzz from a non-alcoholic beer so it’s really not my fault.  Luckily for me, the majority of alcohol bakes out in these Kahula White Russian Cookies so I can have as many as I want without that nasty hangover I am WAY too old for!

Have you ever had a White Russian? It’s basically vodka, Kahlua and cream. Simple and delicious. It is actually my husband’s favorite drink which is why I had to make a cookie after it. This cookie has all the elements of a White Russian minus the vodka.  But who needs vodka when you can have espresso, Kahlua and white chocolate all wrapped up in one awesome cookie! Yum!

Let’s just talk for a minute about what I ate this Holiday season. I would guesstimate about 3 pounds of cheese..omg…I LOVE cheese, 2 entire boxes of chocolate, beef & pork meatballs and I NEVER eat beef & pork, a bushel of dumplings….kinda don’t even feel guilty about that one and we haven’t even gotten started on the cookies! Soft & Chewy Brown Butter Snickerdoodles with Caramel Bits

I can still remember the first time I tried brown butter.  I was watching an episode of Anne Burrell’s Secrets of a Restaurant Chef (love her!) where she made a brown butter tilapia dish look so amazingly delicious and most important easy to make, I just had to try it….and my life was forever changed!!  If you haven’t tried brown butter, you truly haven’t experienced all life has to offer it is SO good! It’s one of the simplest and easiest ways to add the most delicious deep rich & intense nutty caramelized flavor to your dish.  Even the smell of the butter browning sends your taste buds into high gear salivating at the flavor. It’s seriously out of this world! Once I tried it I knew I had to use it in a cookie.

Coconut Lime Cookies

So I know this is totally not the time for something limey & beachy and a cookie you’d enjoy sipping on a margarita or mojito.  But I thought you guys might appreciate a little break from all the pumpkin, maple pecan, peppermint & apple based desserts typically found right around this time of year.  Don’t worry though, this cookie is still totally decadent, which can still make it appropriate for this time of year.  And besides, when is it really a bad time to have a cookie, especially coconut lime cookies?
